About this coffee

INDELIBLE - a name that stands for unforgettable moments and does this coffee credit. The journey of this exceptional coffee begins with the harvest of the fully ripe Geisha coffee cherries, which score 24 on the BRIX meter. Each cherry is carefully selected to ensure that only the best and most full-bodied fruits are used. After selection, the cherries are stored in a tank for an extended period of time while pH, temperature and CO2 levels are carefully monitored. Each step is carried out with the utmost precision and dedication to ensure that the coffee can develop its full potential.

Before the coffee cherries are finally separated from the pulp, they go through another special step. They are placed in a rum barrel for a period of time, where they absorb the aromas and flavours of the barrel. The barrel is carefully rolled to ensure even penetration of the coffee. This unique refinement adds an extra dimension to the coffee and makes it a special taste experience.
Finally, the remaining pulp is removed from the kernel and the coffee beans are sorted according to size, density, colour and shape. Every single bean is treated with the utmost care to ensure that only the best and most perfect beans find their way into your cup.

The coffee is then carefully spread out on shaded, raised African drying beds. Here it is dried with the utmost care, avoiding direct sunlight to prevent cracks in the parchment. The temperature and humidity in the drying houses are strictly controlled and kept within certain parameters. Every single coffee bean is treated with love and passion so that it can fully develop its unique aromas and flavours. But this is not the end of the indelible's journey. After the coffee has dried to about 11%, it is packed into special Grain Pro bags and stored in the bodega. Here it can rest, balance its moisture content and absorb more aroma from the husk. This resting phase is crucial for the quality and distinctive character of the coffee. The coffee is then prepared for export in vacuum-sealed 15 kg packages.
