About this coffee

This Colombian green coffee was decaffeinated using the "sugar cane" process, which we intentionally selected due to its gentleness in comparison to other common methods and its ability to retain the coffee's distinctive qualities. This exceptional microlot was processed with the innovative water pillow technique, pioneered at our El Fénix farm in Quindío. By using cool water over a sealed layer of plastic, the process creates a vacuum, locking in the coffee cherries while keeping fermentation temperatures low and stable.
The cherries rest in this oxygen-free environment, developing rich flavors over an extended period. Post-fermentation, they’re carefully dried on raised beds for up to 20 days - either in cherry for anoxic naturals or after pulping for anoxic washed profiles.

ORIGIN INFO

The drying station

This coffee comes to us through an incredible partnership with a producer-focused importer working to transform the coffee sector in Colombia. By empowering smallholder farmers and fostering sustainable practices, they’re creating lasting positive change at origin.
Their approach prioritizes quality, community, and sustainability. Farmers receive support through local cupping labs, infrastructure investments, and hands-on training to improve coffee consistency and unlock higher incomes. A special emphasis is placed on empowering women in coffee, offering them access to leadership roles and higher-earning opportunities.
Environmentally, the focus shifts towards sustainable farming techniques to balance Colombia’s high yields with long-term soil health. Initiatives like the Red Associations in Huila have been particularly impactful, helping producers add value, build resilience against climate challenges, and achieve fairer, more stable prices.
Through these efforts, this coffee is a reflection of dedication at every step, from farm to cup - delivering exceptional flavor while supporting a more equitable and sustainable coffee future.
