About this coffee

This marks our fourth experimental collaboration with the renowned Don Eli farm in Tarrazú, Costa Rica. Carlos Montero, a seasoned coffee farmer in Tarrazú—the premier coffee-growing region in Costa Rica—teams up with his adventurous son Jacob to craft some of the region's most exiting coffees. Building on last year's exceptional results, we've once again opted for the same processing method for this lot, working with 400 kg of Catuai variety coffee sourced from the highest elevations of Carlos's farm, La Pastora.. Only the ripest cherries were handpicked for this batch and then sealed in hermetic fermentation tanks for five days, with pH and temperature closely monitored throughout. Afterward, the cherries were carefully dried on outdoor beds for nearly four weeks until they reached perfect moisture content. To ensure peak freshness, the coffee was sealed in vacuum packs. The result? A beautifully crafted, fruity coffee that truly stands out.

The Farm

Since 2018, we've been working closely with the Don Eli farm in Costa Rica, trading directly to bring you some of the finest coffees this region has to offer. Carlos Montero’s unwavering passion and meticulous approach to every aspect of coffee production is evident in every cup. The coffee in this lot hails from "La Pastora," a high-altitude plot sitting at over 1900 meters. The unique microclimate here is ideal for coffee cultivation: fertile soil, fresh, cool air, and a perfect balance of rainfall and sunshine thanks to the crescent-shaped plot. The elevation allows for slow ripening of the cherries, intensifying the flavor. Carlos nurtures the trees of La Pastora with care, using thoughtful methods to protect the plants from disease. We believe that this combination of a unique location and Carlos’s dedication results in some of the best coffees Costa Rica has to offer, harvest after harvest.
